Vegetable Tagine with Couscous


Vegetable Tagine with Couscous is a main dish recipe that would surely be a family favorite. The tagine made with sauteed vegetables, turmeric powder and cinnamon gives a classic flavor to this Continental cuisine.

100 gm couscous
30 gm red bell pepper
25 ml virgin olive oil
100 gm potato
100 gm chickpeas
100 gm zucchini
50 gm green olives
50 gm butter
8 gm paprika
5 gm spice chili powder
1 teaspoon powdered turmeric
black pepper as required
30 gm capsicum (green pepper)
30 gm yellow bell pepper
3 sprigs mint
100 gm carrot
100 gm long aubergines
200 ml tomato chili sauce
50 gm black olives
1 gm star anise
5 gm cinnamon
20 gm ginger
salt as required
1 tablespoon lemon juice

Step 1
In a steamer add couscous with desired amount of water and olive oil. Steam the couscous for minimum 8 minutes and then remove from heat and transfer in a separate dish. Add lemon juice, olives, chopped mint leaves, salt and pepper to it. Toss well and keep it aside.

Step 2
Place a pan over medium heat and melt the butter. Add chopped carrots, bell peppers, diced zucchini, chickpeas, aubergines, grated ginger, potatoes and saute for about 5-10 minutes until tender. Cook the vegetables well and then add cinnamon, star anise and spice chili powder to it.

Step 3
After some two minutes, remove the pan from heat and add the tomato chili sauce with paprika over it. Mix well and serve with couscous. Your Vegetable Tagine with Couscous is now ready. Serve hot and enjoy!
