Ingredients:
1 tablespoon margarine
salt as required
1/4 cup skimmed milk
1 egg yolk
1/2 onion
1/4 cup yellow zucchini
parmesan cheese as required
1 tablespoon all purpose flour
red pepper as required
2 egg whites
1 dash white vinegar
1/2 tablespoon virgin olive oil
2 tablespoon basil
1 clove garlic

Procedure:
Step 1
To prepare this mouth-watering appetizer recipe, heat oil in a pan, then add chopped onion, minced garlic, grated zucchini and finely chopped basil leaves. Reduce heat and simmer for about 2-4 minutes, until tender. Remove from heat and add the grated Parmesan cheese as per your requirement.

Step 2
To make the souffle, take a pan and add margarine, stir well as you add flour, salt and red pepper as per your preference. Stir and cook the mixture for a couple of minutes, until completely blended. Reduce the flame and stir in the skimmed milk and combine well with the rest of the mixture. Stir until the mix thickens.

Step 3
Now, pop in the egg yolks and whisk well along with flour mixture. Take another medium bowl whisk together the egg whites and white vinegar, to make a stiff and thick mixture. Then, add this mixture into the flour and combine all the ingredients well. Preheat the oven at 180 degree Celsius.

Step 4
Evenly spread the flour mixture onto the baking tray. Put the mixture for baking for about 30-40 minutes, until you observe a puffy texture and brown color. Once done, gently place the baked souffle onto a foil paper. Spread the vegetable mixture evenly onto the souffle, then roll into a cylindrical shape. Slice out the rolled souffle into equal slices and serve immediately, enjoy!
