There is no better way to consume coconut but to put it in a cake form and slowly relish its mouth-watering flavors. Therefore we have this Vegan Coconut Cake recipe for you all. This easy-to-make recipe is loaded with the goodness of coconut milk, grated coconut, all purpose flour and powdered sugar.
1 cup coconut milk
1 cup caster sugar
1 cup coconut cream
1 teaspoon baking soda
1 cup grated coconut
1 teaspoon baking powder
2 cup all purpose flour
In a deep bowl, add in the all purpose flour followed by baking powder and baking soda. Using a wooden spoon gently mix everything and keep aside until needed again.
Now take another bowl, add cream in it followed by sugar. Mix well. Then add in the earlier prepared mixture (see step-1) in the butter-sugar mixture and mix well.
Slowly slowly stir in the coconut milk in the bowl and simultaneously keep on mixing it. Then add grated coconut and mix again until you get a thick batter like consistency.
Preheat your oven to 180 degree Celsius and brush your baking tray with butter. Pour in the batter in the baking tray and bake for 25 minutes. Once done, allow the cake to come to room temperature. Slice and serve!
