Veg Curd Sandwich


Veg Curd Sandwich is an easy-to-make breakfast recipe. Made with hung curd and fresh veggies, this delicious and quick recipe can be packed into your kid’s lunchbox. Rich in fibre and proteins, this healthy recipe is also suggested for people looking forward to weight loss. You can prepare this easy hung curd recipe in minutes for lunch and even dinner. You can also carry this healthy sandwich to work as it is non-messy. It is important to get the right consistency of the hung curd as it often gets spoilt in hot and humid weather. Try this amazingly delicious breakfast recipe that can be made in minutes. Add some schezwan sauce in the hung curd to get that spicy taste along with some red chilli flakes. If you’re a veggie lovers and love to experiment with more and more of fresh vegetables, then customize and add more healthy ingredients like sweet corn, baby corn, broccoli, bell peppers etc.

1/2 cup hung curd
1 small grated cucumber
1/4 teaspoon garlic paste
2 pinches salt
6 slices white bread
1 small grated onion
1/4 teaspoon black pepper
2 teaspoon butter

Step 1
Peel the cucumber and wash it under cold running water. Pat dry it with a kitchen towel and grate it. Grate onions too and keep it aside in a bowl along with grated cucumber. You can also add more veggies as per your preference. Take hung curd in a bowl and add all the veggies and spices (except bread). Mix until well combined.

Step 2
Take a bread slice, spread a thick layer of hung curd mixture on the bread and then cover with another slice of bread, press it gently to make the sandwich. Grease both the sides of the bread with butter. Alternately, you can also use ghee instead of butter.

Step 3
Heat a non-stick pan, smear a little butter on it and put the sandwich on the same. Cook for a minute from lower side or till it gets a slight golden brown colour. Flip the sandwich and cook by pressing it with the spatula till both the sides turn golden brown and crisp.

Step 4
Alternately, you can also make these hung curd sandwiches in a griller/sandwich maker. The process will remain the same. Veg Curd Sandwich is ready, slice them diagonally. Serve the sandwich with cilantro chutney or tomato ketchup.
