Taco Stuffed Zucchini Boats


Taco Stuffed Zucchini Boats recipe is a delicious and healthy delight that is loved by foodies all over the world. Made with zucchini, stuffed with cheese, chicken, tomatoes, olives and topped up with a melange of spices, this snack recipe is quite sumptuous and is a refreshing change from the regular stuffed tacos. The taste of chicken and cheese wrapped inside zucchini that is baked to perfection, tantalizes your taste buds and makes you crave for more.

2 zucchini
1 tablespoon chilli powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
salt as required
1/2 cup tomato chili sauce
1 cup mozzarella
2 tablespoon black olives
2 cup shredded chicken
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1 teaspoon cumin seeds ground
black pepper as required
1/2 cup water
1 tomato

For Garnishing
1 handful coriander leaves

Step 1
Start by chopping the tomatoes, slicing the olives and grating the mozzarella. For zucchini, cut them lengthwise in half and with a help of spoon, scoop out the pulp and reserve it in a bowl. Leave some pulps in zucchini boats.

Step 2
Now, take a baking sheet and place the zucchini boats on it, keep the sheet aside. Meanwhile, preheat oven to 200 degrees Celsius. Now, place a pan over medium flame and add shredded chicken in it. Cook it until it is tender and is no longer raw. Add the zucchini pulp and mix it well.

Step 3
Now, add chilli powder, garlic powder and onion powder to the pan and mix it well with chicken. Season it with oregano and paprika and add salt, cumin and black pepper to the chicken. Toss the chicken well to incorporate the flavours of all spices well with it. Once done, add chilli tomato sauce and pour water in chicken. Combine the ingredients well and then let it cook for a while. Once the water has evaporated, take it off the flame.

Step 4
Your taco mixture is ready. With a spoon, stuff zucchini boats with taco mixture and top it nicely with chopped tomatoes and grated mozzarella cheese. Place the uncovered baking sheet in the preheated oven and bake it for 20 minutes. Zucchini boats will become tender on baking. Once cooked, remove from oven and add sliced olives. Serve these hot with a garnish of coriander leaves on top to enjoy!
