Sweet Potato Biscuits

Biscuits are the perfect companion of your piping hot cup of tea and compliment them really well. These biscuits are prepared using sweet potatoes, buttermilk, all purpose flour and baking soda. Sweet potatoes are an excellent source of beta carotene, vitamin C, and potassium. They are also a decent source of many other vitamins and minerals. They are likely healthier than regular potatoes.

2 cup mashed sweet potato
3 cup all purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
1/2 cup buttermilk
6 teaspoon brown sugar
3 teaspoon baking powder
1/2 cup butter

Step 1
To make these amazing biscuits, take a bowl and combine together all purpose flour, brown sugar, baking powder, baking soda, and salt. Whisk well.

Step 2
Add melted butter to it and mix until the mixture is crumbly. Whisk the mashed sweet potatoes and buttermilk in another bowl.

Step 3
Add this to the flour mixture and mix well until the dough is sticky. Sprinkle some flour on a flat surface and knead the dough for 4-5 minutes.

Step 4
Roll the dough and cut it into small round balls. Place them on a baking tray lined with parchment paper.

Step 5
Place the tray into a preheated oven at 225C/450F and bake for 10 minutes or until lightly browned.

Step 6
Remove and cool. Store the biscuits in an airtight container and serve as needed.
