Bored of the mundane rotis that you have been eating since ages? Give Sweet Corn Roti a try to delight your taste buds with something new. Made with soya flour, whole wheat flour, ginger and chili paste fused with sweet corn and cheese, this recipe will give you a burst of flavors with the very first bite you take in your mouth.
1 1/4 cup whole wheat flour
1/2 cup crushed lightly frozen sweet corn
1/4 teaspoon crushed to paste green chilli
4 tablespoon coriander leaves
salt as required
4 tablespoon soya flour
1/4 teaspoon ginger paste
6 tablespoon grated cheese cubes
1/2 teaspoon soybean oil
Take out frozen sweet corn kernels and put them under running water and let defrost. Once done, take a deep-bottomed pan, add enough water along with the corn kernels and boil them until they turn tender. In the meantime, take a chopping board and chop the coriander leaves. Also, crush the boiled corn kernels and keep aside.
Next, in order to make a dough and put whole wheat flour, soya flour, chopped coriander leaves along with the crushed corn kernels. Mix them and put ginger paste, green chili paste and grated cheese. Knead it into a semi-stiff dough and cover it with a muslin cloth and keep aside for about 15 minutes. Once done, knead again with the help of soya oil this time.
Preheat a pan and roll out few balls. Fatten the dough balls in a circular shape as that of rotis and cook on medium high flame on each side until they turn golden brown. Use soy oil liberally. Repeat the same procedure with the rest of the dough balls. Serve hot along with any curry of your choice. Enjoy.
