1/2 cup soaked overnight, boiled chickpeas (kabuli chana)
2 tablespoon corn starch
1/2 teaspoon cumin seeds
3 tablespoon onion
salt as required
1/2 cup refined oil
1/2 cup spinach
1/4 teaspoon baking powder
1/4 teaspoon red chilli powder
1/4 tablespoon ginger
powdered black pepper as required
In a grinder jar, add the boiled chickpeas and grind these to form a coarse paste. Next, in a pan, add spinach leaves and boil over medium flame for about 8-10 minutes. Once boiled, drain the water from the leaves and mix with the coarse chickpea paste.
Now, sprinkle the chickpea-spinach mixture with corn starch, baking powder, red chili powder, salt and black pepper powder as per your taste. Now, add in the finely chopped onion, crushed ginger and cumin seeds and mix all the ingredients well. Add a little water to get a dough like consistency. Form equal small sized balls from the spinach mixture and flatten these between your palms. In a pan heat oil and deep fry the fritters until they turn golden and crispy. Serve hot with some tangy sauce, enjoy!
Now, place a deep bottom pan over medium flame and add refined oil in it. Let it get hot and then, one by one, fry the spinach and chickpea fritters until they turn crisp and golden brown on both sides. Once done, transfer these onto a plate lined with absorbent sheet to soak up the excess oil. To serve, place these on a platter with a dip of your choice and enjoy these hot!
