Craving for a healthy yet a lip smacking soup recipe which you can start your meal with? Try Spicy Salsa and Bean soup recipe made using kidney beans, along with white spring onions, tomatoes and vegetable stock, sprinkled with chili flakes and dried oregano on top.
1/2 cup boiled red kidney beans
1 teaspoon garlic
salt as required
1/2 tablespoon tomato ketchup
1/2 cup blanched tomato
1 teaspoon virgin olive oil
2 tablespoon spring onion whites
1 1/2 cup veg stock
1/2 teaspoon oregano
2 pinches chilli flakes
First of all take out a chopping board and chop blanched tomatoes, garlic and spring onions. Take a pan and heat it on medium flame, add garlic and spring onion and saute them for a minute or two. Then, mix chopped tomato, chili flakes, oregano and tomato ketchup in it and stir again for a while.
Once done, add the boiled kidney beans, vegetable stock to the mixture. Add salt according to your taste and boil it while keeping the flame on medium-high. Keep stirring.
You can add some cheese for the garnishing. Your Spicy Salsa and Bean soup is ready to be served and savored. Enjoy.
