Commonly known as Tortila Espala, this Spanish Potato Omelette recipe is a delicious escape from the everyday monotonous omelette you get to eat in the breakfast. Easy to prepare at home, it finds use of lots of fried and crispy potatoes along with parsley leaves for an unforgettable taste. In order to relish it in a better way, you can also have this mouth-watering sumptuous omelette with a glass full of orange juice and enjoy every bite of it.
2 tablespoon virgin olive oil

Beat eggs in a medium sized bowl and add salt to it. Mix well and set aside. Now, in a separate bowl, toss chopped potatoes and drizzle some salt over it. Mix well and set aside.
Place a non stick pan over medium flame and pour oil in it. Once the oil is hot enough, add chopped potatoes to it and fry them till they turn brown and crispy. Gently turn them with a slotted spoon in between. Once done, transfer the potatoes to a bowl and set aside.
In the same pan add onions and saute them till they turn translucent. Once done, transfer these onions to the potato bowl and keep it aside. Let it cool. Once the mixture has cooled, carefully add the beated eggs to it and mix well using a spoon.
Add this mixture to the same pan and spread evenly over medium flame. Cook for sometime till the edges turn brown, keeping in mind to flip the sides in between. You can loosen the edges with the help of a spatula.
Your spanish potato omelette is now ready. Turn off the gas knob and transfer it to a separate plate. Serve hot.
