Samak Ki Khichdi is a delicious dish which you can enjoy during the Navratri season. Prepared using samak ke chawal, tomatoes, potatoes, ghee, green chillies, and ginger.
2 diced potato
2 cup samak chawal
1 tablespoon cumin
2 tablespoon chopped coriander leaves
3 tablespoon ghee
1 chopped carrot
2 chopped tomato
2 tablespoon chopped green chilli
sendha namak as required
1 tablespoon grated ginger
4 green cardamom
To prepare this main dish recipe, take a bowl and add samak rice in water. Soak these for 15 minutes. Meanwhile, place a deep-bottomed pan over medium flame and add 2 tablespoons of ghee in it. When the ghee is hot enough, add cumin seeds in it. Saute till cumin seeds start to splutter.
Next, add grated ginger, cloves, green cardamom and chopped green chillies in it. Saute these until the mixture turns aromatic. Now, add the diced potatoes along with chopped carrot and mix these well. Cook these until they become tender.
Now, add the chopped tomatoes in the pan and cook until they are mashy. Sprinkle sendha namak over the vegetable mixture and mix all the ingredients well, cook for a while. Then, add another pan over medium flame with water in it, and let it boil. Add the soaked samak rice along with a tablespoon of ghee and a pinch of sendha namak in it. Half cook the rice for about 10 minutes and switch off the flame.
Add the half-cooked samak rice in the pan having vegetables. Stir well and add the chopped coriander leaves over the rice. Mix everything well and cover the pan with a lid, cook the rice along with veggies for 5-7 minutes. Once done, switch off the burner and transfer the khichdi in a bowl. Serve hot with beaten curd to enjoy!
