Roasted Pepper Pasta Salad


Craving for a unique and different salad with some pasta in it? Roasted Pepper Pasta Salad is a healthy recipe that is sure to satisfy your cravings. This is an easy recipe as it is made from just a few ingredients and doesn’t require much effort from your end.

3 cup pasta fusili
1/2 yellow bell pepper
2 tablespoon almonds
1 tablespoon lemon juice
1 bunch basil
black pepper as required
1/2 red bell pepper
3 clove garlic
2 tablespoon extra virgin olive oil
1/4 cup mozzarella
kosher salt as required

Step 1
Place a pan of water on top of medium flame and add the pasta in it. Let this boil until the pasta is cooked. Strain the water and transfer the boiled pasta into a bowl. Next, take a deep pan and place foil in it. Place this on medium flame and roast bell peppers along with garlic in it. Once done, add the roasted ingredients to a bowl and cover them.

Step 2
In another pan, roast the chopped almonds over medium flame. Once done, set them aside to cool. Next, in a large bowl, chop the roasted bell peppers and garlic and sprinkle some oil along with lemon juice over them. Mix them well and then add the boiled pasta. Give this a good mix and add in the grated mozzarella, chopped almonds, basil, black pepper powder and kosher salt to this bowl. Whisk it well so that the pasta is coated with the salt and pepper. Once done, Serve it and enjoy!
