With Vegan food culture gaining popularity all over the world, the culinary world is coming up with new and innovative dishes. Red Pumpkin with Coconut is a delicious Vegan recipe which is extremely creamy and mouth-watering. Prepared using basic ingredients, this Continental recipe has exotic taste of red pumpkin, tangy flavor of tamarind and freshness of coconut.
500 gm pumpkin
1/2 teaspoon turmeric
2 tablespoon grated coconut
2 green chilli
salt as required
4 tablespoon tamarind
3 tablespoon powdered jaggery
1/2 teaspoon mustard seeds
water as required
4 tablespoon crushed to paste coconut
2 tablespoon coriander leaves
Take a small bowl, add tamarind and enough water in it. Soak tamarind for few minutes. Meanwhile, peel the pumpkin and cut it into small cubes. Now, squeeze the tamarind with your hand and pass the juice through a strainer into a small bowl. Discard the residue in the strainer.
Take a blender jar and add the dried coconut, mustard seeds and green chilies to it. Grind till you get a fine powder and set it aside. Heat a non-stick pan over medium flame, add pumpkin, tamarind juice and turmeric powder. Mix the ingredients well.
Add jaggery powder and boil the mixture over high flame till the pumpkin turns tender. Ensure pumpkin doesn’t stick to the bottom of the pan. Sprinkle salt and stir the mixture well.
Add coconut paste along with water in the pan, stirring constantly. Ensure there are no lumps formed. Boil it over medium flame for a minute or two. When you get the desired consistency, remove from heat and transfer it to a serving bowl. Garnish with coriander leaves and serve it hot.
