Ingredients:
1/2 cup quinoa
1/2 cup vegetable broth
1/2 cup boiled American corn kernels
1/4 cup shredded low fat mozzarella cheese
2 tablespoon milk
8 dashes virgin olive oil
1/4 cup arugula
1/2 cup water
1 egg
2 scallions
1/4 cup wheat flour
1 teaspoon salt
1 avocados

Procedure:
Step 1
Add quinoa, water and vegetable broth in a small saucepan, place it over a medium flame and let it boil. Cover the pan with a lid and simmer it for 15 minutes on low flame.

Step 2
Add quinoa, egg, corn kernels, scallions, cheese, wheat flour, milk, hot pepper sauce, and black pepper in a medium bowl and mix properly.

Step 3
Heat a large non-stick skillet over medium flame. Add 1/4 cup of the quinoa mixture and flatten it with a spatula to give it the shape of a pancake. Repeat the process with the remaining quinoa mixture.

Step 4
Fry the pancakes in the skillet just like kebabs for about 5 minutes. Flip carefully and fry the other side of the pancake for about 5-10 minutes more. Garnish the pancake with arugula leaves and serve with chopped avocado and toppings of your choice.
