Puran Poli stuffed with Carrot Halwa


Puran Poli is a popular sweet bread, which is traditionally enjoyed in many states of India. It is one such sweet bread, which is known by several names across the India. Gujartis coined it as Vedmi, whereas it’s called Boli in Malayalam, Bobbattu in Telugu, Obbattu in Kannada, Ubbatti in Konkani, and simpley Puran Poli in Marathi. If you enjoy sweet breads, then you must try this easy recipe of Puran Poli which is stuffed with carrot halwa. It’s prepared using all-purpose flour and whole wheat flour, mixed with salt and ghee, with the stuffing made with carrots, sugar, milk, condensed milk, cardamom, saffron, and ghee.

250 gm all purpose flour
5 gm salt
200 gm grated carrot
200 ml milk
5 gm powdered green cardamom
200 gm whole wheat flour
35 ml ghee
200 gm sugar
20 ml condensed milk
2 gm saffron

Step 1
To prepare this mouth-watering delicacy, take a small bowl and add a few strands of saffron along with 3 tbsps of milk in it. Keep it aside for a couple of minutes. Next, take a mixing bowl and add the flours along with salt and 20ml ghee. Add 1 tbsp of the saffron milk and knead it into a dough. Cover the bowl with a moist cloth and keep aside for 30-40 minutes.

Step 2
Now, take a pan over medium flame and heat ghee in it. When the ghee is hot enough, add the grated carrots and cook till the raw smell goes away. Add the remaining saffron milk and milk, allow it to simmer, then, lower the flame and cover with a lid. Cook till the carrot is tender.

Step 3
Add the sugar and condensed milk to the pan and cook until the mixture starts to thicken. Sprinkle the cardamom and cook till the mixture starts leaving the sides of the pan. Transfer it to a bowl and allow it to cool down.

Step 4
Next, take the dough and divide it into 8 pieces. Spread the dough into discs and place the filling in the center. Pull the dough over the filling to seal it completely. Roll it into a ball and flatten it with your palm. Then, place it on a lightly greased banana leaves or plastic wrap and use a rolling pin to roll them out.

Step 5
Take a tawa over medium heat and place the polis on them. Cook until light brown spots form on both sides, this takes about 2 minutes per side. Keep the polis warm while repeating the process for the rest of the dough & filling of carrot halwa.

Transfer them to a serving plate and enjoy the delicious Puran Poli stuffed with Carrot Halwa!
