Potato and Mayonnaise Chaat is nothing but a new and twisted version of aloo chaat. 200 gm boiled small potatoes with skins
1/2 teaspoon oregano
1/2 teaspoon parsley
2 cloves chopped garlic
powdered black pepper as required
2 tablespoon refined flour
50 ml water
3 chopped spring onions
1/2 teaspoon basil
1/2 teaspoon thyme
2 teaspoon red chilli powder
salt as required
4 tablespoon garlic mayonnaise
2 tablespoon corn flour
100 ml vegetable oil
To prepare this yummy snack recipe, gently press the boiled potatoes with your hands and keep them aside.
Next, you need to prepare the Cajun spice mix, and for that mix together Italian herbs (oregano, basil, thyme, parsley), red chilli powder, garlic, salt, and black pepper in a small bowl. Keep it aside after mixing it well.
Then, take another bowl and add one tablespoon of garlic mayonnaise, all purpose flour, corn flour, water and the Cajun spice. Mix well until a smooth mixture is formed. Add the smashed potatoes in the bowl and gently mix.
Now, put a deep-bottomed non-stick pan on medium flame and heat oil in it. Once the oil is hot enough, add the potatoes in it and deep fry for about 5 minutes or until crisp.
Once the potatoes are fried, take a large bowl and add chopped spring onions in it along with the remaining mayonnaise and fried potatoes. Toss well all the ingredients and serve hot.
