4 cup potato
powdered black pepper as required
1 cup water
2 cup broccoli
400 ml veg stock
To make this delicious and healthy soup, first peel the potatoes and cut them into small pieces. Also, chop the broccoli florets as per the required amount for the recipe.
Now, take a large pan or pot and add veg stock and water in it and mix them together. Place this pan over medium heat.
Add potatoes to the pan and let them boil for a while till they are soft. When potatoes are cooked, add the chopped broccoli florets into the pan too and let them cook till they are soft as well.
When the vegetables are cooked, remove the pan from flame and let the soup mix cool down a little at room temperature.
Once it is cool enough, transfer the soup mix to a mixer-blender and blend it till the potatoes and broccoli are well mixed and potatoes are not mushy.
Season the prepared potato and broccoli soup with powdered black pepper and transfer it to serving bowls. Garnish with herbs and nuts and serve with toasted bread at once.
