Muesli and Sun-dried Tomatoes with Home Pressed Paneer is an exclusive chef recipe which you won’t be able to say no to! The best part about this recipe is its main ingredient – paneer, which can be prepared at home if you do not have it. Muesli is mixed with the paneer to make it healthier. This breakfast cereal will add extra nutrients to your dish and can also be a meal that you can have after work out.
6 cup milk
1/3 cup sun dried tomatoes
2 tablespoon crushed to paste basil
1 teaspoon salt
2 tablespoon refined oil
1 cup muesli
2 tablespoon chopped jalapeno
1 teaspoon black pepper
4 tablespoon mustard sauce
4 tablespoon veg mayonnaise
To prepare the delicious dish, you need to make paneer at home. Though, you can also get it from any grocery store, however, homemade paneer will make your dish flavourful. Now, to make homemade paneer, start by boiling the milk in a heavy-bottomed pan over medium flame and add muesli to it. Add lemon juice to the milk and stir it gently, this will make the milk curdle and help you make paneer easily.
Next, take a pestle and mortar and add black pepper in it. Roughly crush them and add in a small bowl. Then, add a few basil leaves in it along with a little water and crush them to make a paste. Once done, keep it aside until required.
Now, in the curdling milk, add the finely chopped sun-dried tomatoes and jalapenos, and mix well. Cook for a while and then turn off the gas. Afterwards, take a muslin cloth and strain the mixture on it. Hang the muslin cloth and bundle it up for around 30 minutes. This will help you with a shaped paneer.
Then, take a perforated plate and place the prepared paneer wrapped in muslin cloth on it. Put some heavy weight on the top to have paneer straightened up for an hour! This will help you in getting the paneer steaks.
Afterwards, take off the weight from the muslin cloth and check if the paneer is firm. Then, cut the paneer into steaks and marinate the steak pieces using mustard sauce for half an hour. (Note: The ideal way to marinate these paneer steaks is with kasundi, which is a traditional sauce used in Bengali cuisine.)
Once you are done with the marination, char the marinated paneer on coal or grill them on a non-stick pan using a little oil. Serve the dish with vegetable mayonnaise mixed with kasundi mustard to enjoy its full flavours.
