The taste of sweetened cream slathered over a gooey chocolate cake that is placed on a bed of oreo cookies tantalizes your taste buds and compels you to go for a round two of this creamy pie recipe.
50 oreo cookies
500 gm dark chocolate
4 1/2 tablespoon coffee powder
4 1/2 cup sugar
1/2 cup corn starch
5 cup milk
3/4 cup unsweetened cocoa powder
1/2 cup condensed milk
1 1/2 cup melted unsalted butter
1/2 cup coffee
1 pinch salt
5 tablespoon vanilla extract
7 egg yolk
1/4 cup granulated sugar
3 cup heavy cream
To prepare this dessert recipe, transfer the oreo cookies in a ziploc bag and seal it. Using a rolling pin, crumble the cookies by beating then until they turn to powder. Once done, take a bowl and add the crumbled powder to it. Now, pour 1/2 cup melted butter in it. Mix it using a spoon. Now, preheat the oven to 160 degrees Celsius. Place parchment paper in a cake tin and transfer the oreo-butter mix in it. Press the biscuit layer using a spatula. Now, place this in the freezer to set for 20 minutes.
Once set, take it out from the fridge and place it in the preheated oven and bake for 15 minutes. When it is baked, take it out and let it cool. Now, take a bowl and add the heavy cream in it. Start whisking it using a whisk. If you have an electric whisk then use that. Keep whisking until it is fluffy. Add granulated sugar gradually in the cream. Whisk it more. once done, transfer it in the fridge for later use. Meanwhile, preheat the oven to 180 degrees Celsius.
Place a pan of water over medium flame and let it bowl. Now, place a glass bowl with 350 grams of chocolate and 1/2 cup of melted butter over this pan of boiling water in a way that the bowl is just touching the water surface. Keep stirring the chocolate-butter mix and melt the chocolate until it turns glossy. Once melted, take it off the flame. Take a small bowl and mix together coffee powder, coffee, 2 tablespoon vanilla extract and a pinch of salt.
Take a large bowl and mix together 6 egg yolks along with 1 cup sugar till it is fluffy and multiplies in volume. Now, pour the melted dark chocolate mixture in it and mix it in. Make sure it combines well and no lumps are formed. Now, add the coffee-vanilla mixture in it. Whisk this mixture well. Now, in a small bowl, whisk together 5 egg whites along with 1 cup sugar until fluffy and frothy.
Now, add this egg white mixture in the chocolate-egg yolk mixture and gently mix well. Poured this over the baked cookie crust and spread it evenly over it. Transfer the cake tin in the preheated oven and bake fro 30-35 minutes. It will not be complete cooked but once done, take it out onto a wire rack and let it cool. As it cools, it will flatten out. Cover it using cling film and place it in the fridge to chill.
For the pudding, place a pan with remaining sugar, unsweetened cocoa powder, salt and cornstarch over medium flame. add 4 egg yolks and mix it well. Gradually, add the milk and whisk it well. Let it come to boil but constantly stir it well. Once done, transfer it in a bowl and add remaining butter, vanilla extract and dark chocolate in it,. Whisk it well and make sure the chocolate has completely melted. Place this pudding bowl in the fridge to cool. Once chilled, take it out from the fridge and transfer it over the cake. Spread it evenly using a spoon Place it in the fridge to set.
Finally, to assemble, take the cake out from the fridge and spread the prepared whipped cream mixture over it. Cover all sides and de-mould the cake. Cut it into slices and serve immediately to enjoy!
