Microwave Stuffed Tomatoes


A yummy vegetarian recipe loaded with highly nutritious veggies, Microwave Stuffed Tomatoes is an extremely easy dish that you can prepare in half an hour. This vegetarian recipe comes in handy for working people, who don’t have much time to prepare their lunch/dinner. It can be best enjoyed with a butter naan/pudina paratha and even the simple chapatis.

4 large tomato

For Filling:
2 clove chopped garlic
1 medium finely chopped onion
1/2 teaspoon powdered turmeric
1 pinch powdered black pepper
2 chopped green chilli
1 cup mashed paneer
1 teaspoon butter
salt as required
1/2 teaspoon chaat masala powder

For Garnishing:
4 sprigs finely chopped coriander leaves

Step 1
For making this easy main dish recipe, wash the hard tomatoes. Remove the top nicely and scoop the seeds out properly.

Step 2
Take a large bowl and mix chopped garlic, grated cheese, chopped onion, green chillies, salt, turmeric, chaat masala along with the butter for the filling. Microwave at 100 per cent power for about 2 minutes.

Step 3
Stuff the tomatoes with the filling and keep in a microwave safe flat dish.

Step 4
Brush with oil and cover with cling foil. Microwave on 100 percent power for around 4 minutes. Allow to stand for 5 minutes.

Step 5
Garnish with handful of chopped coriander. Serve it hot with a butter naan or pudina paratha.
