Mexican Tarts


Mexican Tarts are the most loved and popular snack recipe among food lovers all over the world. This appetizer recipe is also quite filling due to the generous filling in it. Loaded with delicious vegetables like corn, potatoes, french beans, carrots topped off with zesty mexican sauce and sour cream, this Continental recipe is absolutely irresistible and can steal your heart away.

3 cup boiled frozen mixed vegetables
2 chopped onion
salt as required
2 cup flour
1/4 cup sour cream
1/2 teaspoon oregano
1/2 teaspoon chilli powder
1 green chilli
sugar as required
1/2 cup cheese-cheddar
8 tablespoon virgin olive oil
1 cup wheat flour
2 cup refined oil
1/4 cup green onion
1/4 cup coriander leaves
1 kilograms tomato
1 cup water

Step 1
For the dough, sieve the flours together and add oil, salt and water to it. Knead the dough well and set it aside. Now, roll out into small pieces of dough and flatten them using a rolling pin. Press the flatten sheets in tart moulds and press the edges well. Heat some oil in a pan over medium flame and deep fry these raw tarts until they become crispy.

Step 2
For the Mexican tomato sauce, put the tomatoes in water in a pan and place it over medium flame. Cook them until the skin becomes soft. Once done, remove the tomato skins and chop them into pieces. Heat some oil in a saucepan and add the chopped onions to fry until they turn light golden. Add the chopped green chillies and fry these again. Finally, add chopped tomatoes, chilli powder, oregano, sugar, chopped coriander leaves and salt to this saucepan and give it a stir. Cook the sauce until it thickens. Once done, set this aside to cool.

Step 3
For the filling, heat some oil in a pan and add chopped green onions to it. Saute the green onions till they become soft. Once done, add the Mexican tomato sauce, frozen mixed vegetables along with some salt and cook this until the vegetables turn tender.

Step 4
To serve, in each tart, put cooked vegetables mixture in the tarts and top it up with cheddar cheese and garnish with some oregano to enjoy!
