1 cup finely chopped tomato
1/4 cup finely chopped cabbage
1/4 cup boiled kidney beans
3 tablespoon finely chopped spring onions
1 teaspoon powdered sugar
1/4 teaspoon cumin powder
1/2 teaspoon red chilli powder
3 tablespoon yoghurt (curd)
2 cup vegetable oil
1 cup onion
1/4 cup boiled frozen sweet corn
3 tablespoon finely chopped coriander leaves
1 teaspoon salt
1/2 teaspoon lemon juice
1/2 teaspoon powdered black pepper
1/4 cup grated mozzarella cheese
To prepare this delicious snack recipe, take the rotis/chapatis and cut them in diamond shapes just like nachos in a bowl. Then, put a kadhai over medium flame and heal oil in it. Once the oil is hot enough, add these cut chapatis in it and deep fry them until golden brown in colour. When done, transfer these fried roti nachos in a plate over kitchen towel.
Then, take a mixing bowl and mix together chopped tomatoes, onions, corn, boiled rajma, cabbage, coriander leaves, lemon juice, sugar, salt and other spices. You can use a spatula to mix all these ingredients.
Now, spread one layer of roti nachos on the on the bottom of a shallow baking dish. Then, add the vegetable mixture prepared on top of this layer evenly and generously. Afterwards, sprinkle the chopped spring onions on top of that layer. Finally, spread the grated mozzarella cheese. Put this baking dish in the oven and bake for 10-15 minutes at 150 degrees Celsius, until the top layer is turned golden brown in colour.
Top up with dollops of curd and serve warm.
