Mexican-Baked-Eggs

Try this interesting breakfast recipe made using eggs, black beans and tomatoes. This is an easy-to-make recipe that you can try at home for your loved ones in breakfast. Try this delicious breakfast recipe which is an ideal dish to kick-start your day.

Ingredients:
1 egg
1/4 sliced red onion
2 tablespoon tomato puree
50 gm black beans
1/2 teaspoon crushed to paste red chilli
2 tablespoon chopped chives
1/2 pounds paprika
1 dash powdered black pepper
1 cubed tomato
1/4 red peppers
100 gm diced tomato
1/2 red chilli
1 teaspoon crushed garlic
1/2 teaspoon powdered turmeric
1/2 teaspoon sea salt

Procedure:
Step 1
Dice red onion, red capsicum, fresh tomato and chilli. Drain black beans from the can.

Step 2
Heat a non-stick frying pan, add onion and cook for 1 minute or until softened slightly. Add chilli paste, garlic, and mix in the onion. Add red capsicum and let it cook for an additional minute.

Step 3
Add fresh tomato and cook for 30 seconds. Pour over the top of the mixture in the pan- black beans, canned tomato and tomato paste.

Step 4
Mix all the ingredients and add dry herbs (turmeric, paprika, fresh chives, and chilli (if desired). Allow it to cook for 30 seconds.

Step 5
Create 2 holes in the mixture to crack the eggs into (make sure the yolk does not run).

Step 6
Allow it to cook for a few more minutes until the egg white is hard and the yolk is to your desired consistency.

Step 7
Once done remove pan from the heat and sprinkle with salt and pepper. Serve immediately.
