Methi Palak Papad

2 cup chopped spinach
1 tablespoon mustard oil
2 teaspoon cumin powder
1 teaspoon garlic
2 roasted papad
1 cup fenugreek leaves ( methi)
1/2 teaspoon cumin seeds
1/4 teaspoon chopped green chilli
2 teaspoon ghee
salt as required

Step 1
To prepare this main dish recipe, place two pans simultaneously over medium flame and add water in them. When the water starts boiling, add fenugreek leaves in one pan and spinach in another pan. Blanch both the leaves in boiling water. Once done, take the pans off the flame and drain the water. Keep the spinach and fenugreek leaves in separate bowls and set them aside to cool.

Step 2
Once the fenugreek and spinach leaves cool, transfer them in a grinder jar one by one. Grind them to a fine paste separately. Transfer the spinach and fenugreek paste in separate bowls.

Step 3
Now, place a pan over medium flame and heat mustard oil in it. When the oil is hot enough, add the cumin seeds, chopped garlic and green chillis to it and saute them for a while. Next, add the spinach-fenugreek paste to the pan and fry for a minute. Now, add cumin powder and salt to this mixture and mix it well.

Step 4
Pour ghee to this mixture and keep it on low flame. Once the fenugreek-spinach paste is cooked, transfer the dish in a bowl. Serve it hot with roasted papad to enjoy!
