Marble Cake is a popular cake recipe. It is called so, because it has a streaked appearance which comes by the mixing of two batters-light and dark. It can be a chocolate/orange/vanilla flavoured cake. Marble cake is loved by kids because of the mysterious blending of two colours. You can make this cake eggless by replacing eggs with curd and one banana. It gives the same sponginess to the cake.

Ingredients:
200 gm sugar
250 gm all purpose flour
1/4 teaspoon salt
2 drops vanilla essence
5 egg
5 tablespoon milk
2 teaspoon baking powder
50 gm cocoa powder

For The Main Dish:
200 gm butter

Procedure:
Step 1
Powder the sugar and mix it with butter. Now beat it along with the butter till it is light and fluffy. You can use a hand blender or a whisker for best results. Now add the eggs and beat vigorously till stiff peaks are formed.

Step 2
Now in another bowl, sift together salt, baking powder and flour. This process is important as it enables thorough mixing of baking powder in the flour. Gradually add the flour spoon by spoon to the egg, sugar, butter mixture. Mix well so that no lumps are formed. Add the vanilla essence and mix well. At this point you can add milk if you feel the batter is too stiff.

Step 3
Divide cake batter into 2 portions. In one portion add cocoa powder and mix. Leave the other portion plain. Take a baking dish and line it with butter paper. Grease the paper with some oil and dust some flour.

Step 4
Pour the plain batter first. Now slowly pour the batter with cocoa. Take a small tooth pick and make geometrical pattern by swirling in between the batters.

Step 5
Do not stir, swirl or shake the pan. Or the geometric pattern that you have made will vanish. You have to handle the pan very carefully at this point if you want to have that marble effect.

Step 6
Bake the cake in a pre-heated 180 C oven for 60 mins. The temperature depends upon your oven. You can bake it longer or in less time too. Just insert a skewer and check. If it comes out clean, your cake is done. Allow the cake to cool on a wire rack for half an hour. When you will cut the cake, you will see the two colours! Slice it and serve with a hot cup of tea or coffee. You can also add icing to the cake or serve it with fresh fruits and berries.
