This traditional dish needs no introduction, made with goodness of bottle gourd this delicacy is a perfect treat for taste buds. Bottle gourd is known for its health benefits such as it helps in digestion, promotes weight loss, keeps heart healthy and reduces inflammation of liver. Lauki Kofte is a delicious North Indian recipe, which is prepared with grated lauki (bottle gourd) mixed with some besan (gram flour) and a melange of spices.
250 gm grated bottle gourd
2 tablespoon gram flour (besan)
1/4 cup chopped coriander leaves
1 teaspoon coriander powder
1 teaspoon garam masala powder
1 salt as required
1/2 cup chopped coriander leaves
2 cup pureed tomato
2 tablespoon corn flour
2 chopped green chilli
1 teaspoon cumin seeds
1 teaspoon turmeric
1 teaspoon dry red chili
2 cup vegetable oil
5 cup water
Mix all the ingredients including grated bottle gourd, corn flour, besan, green chillies, coriander, cumin seeds, garam masala, salt and red chilly powder for kofta in a bowl. Make small round balls of equal size. Heat oil in a wok, fry the koftas from both sides.
Drain the excess oil and put the koftas on a paper towel and set aside. Make a paste with onions, garlic and green chilli with the help of some water in the food processor. Remove excess oil from the wok and you should be left with around 2 tablespoon oil in it. Add dried fenugreek leaves and cumin seeds. Saute for 1 minute.
Add the paste to this mixture, add spices and salt. Mix well. Now add tomato puree and saute till the oil leaves the sides. Add water and let it boil for few minutes. Now add the koftas made earlier in the curry. Cook for few minutes. Garnish with a dash of fresh cream and top it with some fresh coriander leaves (optional). Serve and enjoy.
