Khoya Paneer Roll is a quick North Indian recipe that can be served as a snack and also as a main course. On days you do not want to prepare an elaborate meal, this roll recipe can come to your rescue. It is loaded with veggies and hence is filling and scrumptious. This non messy easy-to-make roll is a perfect dish to pack and conveniently carry to work, road trips and picnics. You can tweak this easy roll recipe in your own way by adding ingredients as per your choice.

Ingredients:
1 cup cashews
2 tablespoon ghee
1/4 cup yoghurt (curd)
5 green chilli
4 tablespoon coriander leaves
1/4 shredded ice berg lettuce
1 medium chopped onion
1 small chopped cucumber
salt as required
500 gm paneer
1/2 cup grated khoya
1 tablespoon ginger
5 green cardamom
5 roomali rotis
1 medium chopped capsicum (green pepper)
1 medium chopped tomato
5 gm chaat masala

Procedure:
Step 1
To prepare this easy snack recipe, start with grinding boiled cashwes and keep them aside. Now, take a pan and put it over the medium flame. Heat it and add ghee, green chillies and green cardamom to it, let it pop.

Step 2
Now, add cashew nut paste, beaten curd and salt to it. Stir well and cook for at least 10 minutes. Then add, grated khoya, paneer cubes and chaat masala, stir again.

Step 3
Take a roomali roti and keep it flat. Stuff it with shredded ice beg lettuce, chopped onion, tomato, cucumber and capsicum along with the prepared mixture. Add some more chaat masala for taste. Garnish with mint leaves if you like and serve hot!
