Khatta Meetha Karela


Love it or hate it, but you cannot ignore the fact that karela (bitter gourd) is one of the healthiest vegetables ever. Owing to its bitter taste, not everyone likes this vegetable. Having a number of health benefits, karela is known to be the rich source of antioxidants and is also known to cure chronic cough and respiratory problems such as asthma. Apart from this, it helps marvelously in improving our digestive systems and is an excellent solution to hair and skin related issues.

4 bitter gourd
6 curry leaves
1 teaspoon black mustard seeds
1 shallots (small onions)
1 teaspoon garlic paste
1/2 teaspoon turmeric
1 teaspoon dry mango powder
1 tablespoon jaggery
2 tablespoon vegetable oil
1 teaspoon cumin seeds
2 green chilli
1 teaspoon ginger
1 tablespoon coriander powder
1/2 teaspoon red chilli powder
1 teaspoon tamarind paste
salt As required

Step 1 – Deseed the bitter gourds and chop them
To make this amazing karela recipe, wash the bitter gourds thoroughly under running water and pat dry them. Then, with the help of a knife, slit the bitter gourds vertically from the centre and deseed them. Chop the bitter gourds and keep them aside.

Step 2 – Prepare the tempering
Heat oil in a frying pan and when the oil is hot enough, add cumin seeds, mustard seeds, green chilies and curry leaves in it. Saute for a few seconds and then add chopped onions and saute the mixture for a minute. Stir in ginger and garlic followed by coriander, red chili powder, turmeric and raw mango powder. Drizzle some drops of water and stir well.

Step 3 – Add chopped bitter gourd and tamarind paste
Drop the chopped bitter gourd pieces, tamarind paste and salt in the pan to enhance the taste. Keep on stirring till the mixture is incorporated generously. Let the bitter gourd cook for about 5-7 minutes.

Step 4 – Melt jaggery into the mixture and enjoy
To sweeten the dish more, add jaggery in the pan and let it melt. Once done, turn off the flame and enjoy hot and fresh. For best taste, team it with your favourite Indian bread.
