Uttapam is one of the most popular dishes of South India which is a must in the plate along with dosa, idli, sambar, vada. There is a wide variety of uttapams being served in the menu, ranging from vegetable uttapam to paneer uttapam. One of these delicious varieties is ‘Kaju Uttapam’. This easy-to-make recipe is made with cashew, onion, rice, ginger paste, tomato, green chilli, split black gram and coriander leaves.
12 grated cashews
2 cup rice
1 1/2 finely chopped tomato
1 cup split black gram
refined oil as required
red chilli powder as required
1 finely chopped onion
1 teaspoon ginger paste
2 chopped green chilli
1 1/2 tablespoon finely chopped coriander leaves
salt as required
To prepare this mouth-watering recipe, soak rice and split black gram in a separate bowl, for about 4-5 hours. Grind them into a smooth paste. Take an air-tight container and combine the two of them together along with some salt.
Add some chilli powder and mix well. Cover the container with a lid and leave unattended for half the day.
Heat a pan over a low flame with some oil. Add the ginger paste into the mixture and spread a small amount of it over the pan. Now, add tomato, cashew, onion, green chillies and coriander leaves over it.
Cook from both the sides by greasing with oil. Don’t cook it on high flame, for the best taste cook on low flame. Your Kaju Uttapam is ready. Serve it with coconut chutney.
