Jowar Paratha is a delectable North Indian recipe that is not just filling for the stomach but also satiates your soul. It can be prepared for several occasions like potlucks, picnics, kitty parties and Sunday brunches to make them even more special. Made using jowar flour, boiled potatoes, coriander leaves, green chillies along with dry and wet spices like turmeric powder and ginger-garlic paste, this is a scrumptious breakfast recipe that will leave you feeling full for quite some time.
2 pinches turmeric
2 tablespoon coriander leaves
salt as required
1/2 teaspoon garlic paste
2 cup jowar flour
2 tablespoon ghee
2 pieces green chilli
1/2 teaspoon ginger paste
In a pressure cooker, add potatoes and enough water to cover them. Now, place the pressure cooker over medium flame and let the potatoes boil. Once the potatoes have boiled, drain the water and transfer potatoes onto a plate. Keep aside allowing them to cool down. Meanwhile, chop coriander leaves and green chillies.
Once the potatoes cool down, peel their skin and mash them in a bowl. Mix in jowar flour, turmeric powder, salt, ginger paste, garlic paste, chopped green chillies and coriander leaves in it. Mix it well.
Now, pour enough water and knead a soft dough. Divide the dough in equal proportions and roll into balls. Place one ball on the rolling board and dust with a little amount of flour. Meanwhile, heat the pan over medium flame.
Using a rolling pin, roll the ball into a flat disc. Place the disc over the heated pan and add 1/4 tablespoon of ghee on its sides. Roast the paratha until golden brown in color. Flip the side once the bottom side is done. Cook the other side as well. Once done, take the paratha off the flame and place it on a plate. Repeat the same step with the rest of the balls and cook the parathas.
Transfer all the parathas onto a plate and serve the hot with curd or pickle to enjoy!
