Egg Pasta Salad


When you are looking for a healthy dish that can fill your stomach and doesn’t make you feel guilty, here’s a simple recipe that you can make for yourself – Egg Pasta Salad. This salad recipe is truly delicious and nutritious and will give you the required amount of daily nutrition for your body. Prepared using penne pasta, boiled eggs, yellow bell pepper, olives, onion, tomatoes and vinegar; this healthy recipe can be packed for lunchbox too!

1/2 cup pasta penne
2 tomato
1 1/2 tablespoon vinegar
1/2 yellow bell pepper
1/4 cup black olives
2 boiled egg
2 gm mozzarella
1 onion
1 cucumber

For Dressing:
1/2 teaspoon black pepper
2 tablespoon extra virgin olive oil
1/2 teaspoon salt

Step 1
Put a deep-bottomed pan on medium flame, add water in it and bring it to a boil. Add the pasta in the boiling water and add vinegar along with salt in it. Let the pasta cook for about 10-12 minutes. Once the pasta is boiled, turn off the flame.

Step 2
Transfer the boiled pasta in a bowl and add in the chopped tomato, chopped cucumber, finely chopped onion, olives and yellow bell pepper. Mix well all the ingredients and then slice the boiled eggs above the prepared salad. In a small bowl, mix together salt, remaining vinegar, extra virgin olive oil, and black pepper powder.

Step 3
Sprinkle some grated cheese over the salad and pour the vinegar dressing, toss carefully. Enjoy!
