Curried Potato is an easy-to-make and spicy potato dish. The main ingredients used in this recipe are potatoes and canned black beans. While Madras curry masala adds its distinct flavour to this mouth-watering dish. Curried Potato recipe is a perfect choice for get-togethers or lunch and dinner with family and friends.
1 1/4 teaspoon balsamic vinegar
3 1/2 cloves garlic
4 medium tomato
3 1/2 small carrot
3 1/4 pieces jalapeno
350 gm canned black beans
2 1/2 medium onion
3 1/4 tablespoon Madras curry powder
2 tablespoon vegetable oil
1 cup water
1 handful coriander leaves
Dice the onions and carrots, peel the potatoes, chop tomatoes and jalapeno chiles and mince the garlic cloves. Keep them aside in separate bowls.
Take a saucepan and heat 2 tablespoon oil over medium flame. Now add onions and garlic in it and saute for 5 to 7 minutes until the onions become tender and lose their color. Now add potato and carrot chunks, Madras curry powder and cook for 4 minutes.
Now add canned black beans with their liquid, broth, tomatoes, jalapeno chiles, vinegar, and 1 cup water. Sprinkle some salt and pepper and stir well. Cover with lid and simmer 45-50 minutes. Also stir in between.
Garnish the dish with coriander leaves (optional). Serve hot with rice or chapati, as desired.
