Black Bean and Corn Quesadilla is a fulfilling snack that one would definitely like to have. Filled with monitory cheese and sweet baby corns it is an exotic snack. People usually like to have quesadillas because of their crisp texture and awesome fillings. This Continental recipe of quesadillas is very easy to follow. It has a filling of black beans in it. Black beans make you feel satiated for a very long time. You could prepare this snack in breakfast as it would help you in hunger management all day long. This is a healthy and tasty snack as black beans are known to be rich in fiber and protein.
chilli flakes as required
1/2 tablespoon brown sugar
1/2 cup finely chopped onion
1/2 cup drained,rinsed black beans
1 cup shredded monterey jack cheese
1 tablespoon butter
2 tablespoon salsa sauce
1/2 cup drained baby corn
1 teaspoon virgin olive oil
To prepare this tasteful snack, first, take a medium sized saucepan and place it on medium flame. Then, pour some oil in it and let it heat. Now, add the chopped onions to the pan and cook for a while until soft. After that, add black beans along with baby corns and cook for next 2 minutes. Next, add salsa sauce, sugar, red pepper chilli flakes in the pan and mix well. Once cooked, turn of the flame and keep aside.
Now, take another large sized skillet and place it on low flame. Then, melt some butter in it and place a tortilla wrap over it. Then, spread a layer of cheese over it. After that, spread another layer of corn and bean mixture prepared. Then, cover the mixture with another tortilla wrap. Flip and cook from both sides until golden brown. Divide the wrap into 4 equal parts and transfer them in a serving plate. Similarly, do the same with remaining tortilla wraps and serve warm. Your quesadillas are ready.
