Beetroot-Vermicelli-Barfi

The mention of barfis brings back the memories of childhood, especially the ones of the festive season. Beetroot Vermicelli Barfi is also one of such sweet delight that is absolutely delicious and is perfect for the festive season! Made with beetroot, vermicelli, sugar, milk, ghee and dry fruits, it is a luscious dessert recipe that can become a favorite of anyone with a sweet tooth.

Ingredients:
600 gm beetroot
400 ml milk
6 teaspoon ghee
20 gm powdered mixed dry fruits
200 gm vermicelli
100 gm coconut milk powder
200 gm sugar
4 teaspoon powdered green cardamom

Procedure:
Step 1
First, add green cardamom and mixed dry fruits in a grinder jar and grind them. Transfer the powdered mixture in a bowl. Now, take the vermicelli, and put it in a pan. Place the pan over medium flame and pour the ghee in it. Fry the vermicelli, while making sure that it doesn’t stick to the bottom of the pan. To this pan, add the milk, sugar, coconut milk powder and mix all the ingredients well.

Step 2
Now, in a pressure cooker, take the beetroot along with water and place it over medium flame. Once it boils, take it off the flame and drain the water out. Peel the beetroot and mash it. Put this mashed beetroot, along with the powdered dry fruits mix into the vermicelli pan. Keep stirring the barfi mixture until a thick consistency is attained. Take it off the flame and transfer it in a tray. Let it cool down.

Step 3
Once it cools down, it will solidify. Now, cut into pieces of desired shape without crumbling it into bits. Serve it fresh, or store in the refrigerator to retain freshness. Enjoy!
