1/4 cup refined oil
1/2 inch ginger
1 teaspoon garam masala powder
1/2 teaspoon lime juice
salt as required
1/2 teaspoon red chilli powder
1/4 teaspoon cumin powder
1/2 tablespoon rice flour
2 sprigs coriander leaves
4 cloves garlic
1/4 teaspoon powdered turmeric
1/2 teaspoon coriander powder
1/4 teaspoon black pepper
bread crumbs as required
To prepare this scrumptious recipe, wash and peel the avocados and keep it aside. Heat 2 cups of water in a bowl and add the peeled avocados in it. Bring it to a boil and allow the avocado to become soft. Remove from the heat and drain the water. Allow it to cool for 10 minutes.
Mash the avocados with the help of a spoon and keep them aside. On the other hand, wash and grate ginger, garlic, carrot separately. Now take a chopping board and finely chop onion and coriander leaves.
Next, heat refined oil in a frying pan over medium flame and add carrots to it. Fry grated carrots for 5 minutes and add grated ginger, garlic, onions in it. Stir well for few more minutes and add coriander leaves as per your liking.
Now add garam masala powder, coriander powder, turmeric powder, chilli powder, black pepper, cumin powder and mix the ingredients well. Add the mashed avocados along with lime juice, salt and stir until the mixture becomes thick.
If the mixture is too soggy, add rice flour and make the consistency thick. Once you get the desired consistency, remove from heat and allow it to come to the room temperature. Make small balls of the mixture and dust them with the breadcrumbs until fully coated.
Now, heat oil in a frying pan and gently roll in the kofta balls in it. Fry for 4-5 minutes, until the koftas appear crisp and golden brown. Remove from the heat and place them on a plate.
Remove the excess oil with the help of tissue papers. Serve hot with mint chutney or a zesty dip of your choice.
