Aloo Phujia is a delicious North-Indian recipe which is prepared with potatoes, tomatoes, green peas and spices. This vegetarian dish is easy to cook and has mild spicy flavours. Serve it with freshly made chapatis and onion and tomato raita or with steamed rice and salad and you are going to have the best ever experience of homemade food. If you want to add some more taste to Aloo Phujia, you can add a few drops of warm ghee to it before serving.
400 gm potato
1 teaspoon cumin
1 teaspoon red chilli powder
1/4 cup vegetable oil
200 gm shelled peas
1 teaspoon turmeric
salt as required
Firstly, wash potatoes and place them in a pressure cooker. Pour water and boil the potatoes. On the other hand, place tomatoes and onions over a chopping board and chop them. Once the potatoes are boiled, peel them and cut them into cubes.
Next, place a frying pan over medium flame and pour oil in it. Once the oil is heated, add chopped onions into the pan. Fry them until light brown in colour. Add the peas and cook on low flame till they soften. You may also cover the pan for a while.
Now add salt, cayenne pepper, turmeric and cumin powder and mix them well. Then, add potato cubes and cook the mixture for 10-15 minutes.
While stirring the mixture occasionally, add chopped tomatoes into the pan and cover the pan with a lid. Cook the mixture for 10-12 minutes more. Garnish with coriander leaves or the toppings of your choice and serve. It tastes great with steamed rice.
