With monsoon setting in, a must try dish in this weather is a pakora or a bajji with a cup of masala chai. Aloo Bajji is a delicious appetizer recipe that you can make for your family and friends on occasions like kitty party, picnic, and game night. Also known as a pakora, this bajji recipe is prepared with parboiled potatoes, gram flour, baking soda, red chilli powder, and salt.
2 cup gram flour (besan)
4 teaspoon chilli powder
water as required
2 cup refined oil
1 teaspoon baking soda
salt as required
To prepare this delicious pakora recipe, put a pressure cooker on high flame and add potatoes in it along with the required water. Close the lid of the cooker and let the potatoes boil for 2-3 whistles. Switch off the burner after the whistles are done and let the steam evaporate on its own.
When done, drain the extra water and bring out the potatoes in a plate. Let them cool till they are warm enough to hold, and then peel and slice them evenly in a bowl. Make sure the potatoes are parboiled.
Next, prepare the batter for the pakoras. For the same, take a large bowl and mix together gram flour or besan, chilli powder, salt, and baking soda. Add water to make the batter for the pakoras. (Note: You can even add carom seeds in the batter for a better digestion.)
Now, put a kadhai on medium flame and heat oil in it. When the oil is hot enough, dip 2-3 potato slices into the prepared batter and carefully place in the kadhai. Deep fry the batter dipped potatoes until golden in colour and then take out on a kitchen towel to absorb the extra oil. Repeat the procedure until all the potato slices are fried.
Serve these fried bajjis with tomato ketchup and green chutney, and pair with a cup of hot masala chai.
