Achari-Sabzi

Achari Sabzi is a popular winter dish which is commonly known as “Kachari-Pachari” in North India. Easy to prepare at home, this vegetarian side dish is a must try for all those who love carrots and radish. It’s highly recommended to serve this lip-smacking dish with hot steamed rice or chapatis for an unforgettable taste.

Ingredients:
3 carrot
3 tablespoon vegetable oil
1 pinch asafoetida
1 teaspoon turmeric
water as required
3 radish
1 teaspoon mustard seeds
1 pinch cumin seeds
salt as required
5 drops lime juice

Procedure:
Step 1
Place a pan over full flame and pour oil in it. Once the oil is hot enough add mustard seeds, asafoetida and cumin seeds to the pan. Allow the seeds to crackle and then put the chopped carrots and radish to the same pan. Saute them for few minutes and then add turmeric powder and salt to it.

Step 2
Add water to the pan now and simmer for minimum 10 minutes. After 10 minutes, drizzle lime juice over the cooked vegetables to develop sourness. Your Achari Sabzi is now ready. Serve this dish with hot rice or chapatis and enjoy.
