Achaari Bhindi


Achaari Bhindi or okra is a popular North Indian recipe which is very easy to prepare at home. This mouth-watering dish can be prepared by using okra and some ground Indian spices like red chili powder, coriander powder, dry mango powder and garam masala powder which add distinct flavors to this vegetarian recipe.

500 gm okra
1/2 teaspoon red chilli powder
1/2 teaspoon dry mango powder
salt as required
1 teaspoon lemon juice
1 teaspoon fennel seeds powder
1/2 teaspoon onion seeds
1 teaspoon ginger paste
1 teaspoon coriander powder
1/2 teaspoon garam masala powder
2 tomato
1 pinch asafoetida
1/2 teaspoon mustard seeds
3 tablespoon vegetable oil

For Garnishing:
2 sprigs coriander leaves

Step 1
Wash okra (bhindi) properly with fresh water and pat dry them well using a tissue paper. Once dry, cut them lengthwise making two pieces from each bhindi.

Step 2
Place these sliced bhindi in a medium sized bowl and pour oil on top of it. Mix properly. Place this bowl in a microwave oven and set it on grill settings. Take out the bowl after 15 minutes and keep aside.

Step 3
Now, take a separate bowl, add a little oil along with asafoetida, fennel seeds powder, mustard seeds and onion seeds. Mix properly and place the bowl in a microwave for 3 minutes. Take out this bowl and add this mixture with the previous bowl of okra and mix properly. Place it in the microwave for another 4 minutes and your achaari bhindi is now ready. Serve this with chapati or steamed rice and enjoy.
